History and Origin of Tsolikauri Wine

Tsolikauri is one of Georgia’s most distinguished indigenous white grape varieties, originating from the western region of Imereti. Known for its elegance, freshness, and natural balance, Tsolikauri has played an important role in Georgian winemaking for centuries. Historical sources indicate that the grape was widely cultivated in Imereti, Lechkhumi, and Racha as early as the Middle Ages, prized for its ability to produce high-quality wines with long aging potential.

The name “Tsolikauri” is believed to derive from local dialects of western Georgia, associated with the grape’s light golden berry color and delicate structure. Throughout history, Tsolikauri vines flourished in Imereti’s humid, mountainous climate and clay-limestone soils, giving the wine its signature crisp acidity and refined mineral profile. Unlike some Kakhetian varieties, Tsolikauri was traditionally vinified using both classic European methods and the region’s unique Qvevri techniques, resulting in diverse wine styles.

Tsolikauri gained wide recognition during the 19th and 20th centuries, when it became one of western Georgia’s most exported wines. Its naturally stable acidity made it suitable not only for dry and semi-sweet wines but also for sparkling wine production — a tradition that continues today. Modern dry Tsolikauri wines are known for their bright citrus aromas, notes of green apple, quince, and pear, as well as their refreshing, clean finish. Qvevri-aged versions develop more texture, depth, and subtle herbal tones.
