Preparation Method

Ingredients

For the Dough:

  • 500 g all-purpose flour

  • 250 ml warm water

  • 1 tsp salt

For the Filling:

  • 500 g fresh cheese (Imeretian, Sulguni, or a mix)

  • 1–2 tbsp butter, softened

  • 1 egg per khachapuri (for topping)

  • Optional: a pinch of salt or a little cream to soften the cheese


Step-by-Step Preparation

1. Prepare the Dough

  1. In a large bowl, mix flour and salt.

  2. Gradually add warm water and knead until smooth and elastic.

  3. Cover with a cloth and let it rest for 20–30 minutes.

2. Prepare the Cheese Filling

  1. Crumble the cheese into a bowl.

  2. Mix with softened butter.

  3. Adjust with a pinch of salt if needed. The filling should be soft but not watery.

3. Shape the Dough

  1. Roll the dough into a thin oval or round sheet, about 5–7 mm thick.

  2. Fold the edges inward to create a boat shape with a hollow center for the cheese.

4. Add the Filling

  1. Place the cheese mixture into the hollow center of the boat.

  2. Fold the edges slightly to hold the cheese but keep the middle open.

5. Bake

  1. Preheat oven to 220°C (425°F).

  2. Place khachapuri on a baking tray lined with parchment.

  3. Bake for 12–15 minutes until the dough is golden and cooked through.

6. Add the Egg

  1. Remove the khachapuri from the oven.

  2. Crack a fresh egg into the center of each khachapuri.

  3. Return to the oven for 2–3 minutes, or until the egg white sets but the yolk remains runny.

  4. Add a small piece of butter on top before serving.

7. Serve

Serve hot, straight from the oven. Break the egg and mix it with the cheese before eating for the authentic Adjarian experience.
