History of Satsivi – Traditional Georgian Walnut Sauce Dish

Satsivi is one of the most famous dishes in Georgian cuisine, traditionally served with poultry such as chicken or turkey. Its name comes from the Georgian word “satsi”, meaning walnut, which is the core ingredient of the sauce.

Origins of Satsivi

Satsivi has roots in ancient Georgia, particularly in the Imereti and Kartli regions, where walnuts were abundant. The dish was historically prepared for winter feasts and festive occasions, as the creamy walnut sauce could preserve poultry flavors and provide a hearty, rich meal.

Traditionally, Satsivi was associated with holiday celebrations, especially Christmas and New Year, and has remained a staple of Georgian festive cuisine. The dish combines local ingredients such as walnuts, garlic, and Georgian spices, reflecting the country’s agricultural heritage and culinary traditions.

Preparation Method

Ingredients

  • 1 whole chicken (1–1.5 kg), boiled and cut into pieces

  • 2 cups walnuts, finely ground

  • 3–4 garlic cloves, minced

  • 1 tsp coriander seeds, ground

  • ½ tsp cinnamon (optional)

  • 1 cup cold water or chicken broth

  • 2–3 tbsp vinegar or lemon juice

  • Salt & black pepper to taste

  • Optional: fresh parsley for garnish

Preparation Method

  1. Prepare the chicken
    Boil the chicken until tender. Remove, let cool, and cut into serving pieces.

  2. Make the walnut sauce
    Grind walnuts finely in a mortar or food processor. Mix with minced garlic, ground coriander, cinnamon, and salt. Gradually add cold water or chicken broth to form a smooth, thick sauce.

  3. Add acidity
    Stir in vinegar or lemon juice to balance the richness of the walnuts.

  4. Combine chicken and sauce
    Place the chicken pieces in a serving dish and pour the walnut sauce over them, covering completely. Chill in the refrigerator for several hours or overnight — Satsivi is traditionally served cold.

  5. Serve
    Garnish with fresh parsley. Best enjoyed with Georgian bread or as part of a festive table.
