Preparation Method
Ingredients
1 whole chicken (1–1.5 kg), boiled and cut into pieces
2 cups walnuts, finely ground
3–4 garlic cloves, minced
1 tsp coriander seeds, ground
½ tsp cinnamon (optional)
1 cup cold water or chicken broth
2–3 tbsp vinegar or lemon juice
Salt & black pepper to taste
Optional: fresh parsley for garnish
Preparation Method
Prepare the chicken
Boil the chicken until tender. Remove, let cool, and cut into serving pieces.Make the walnut sauce
Grind walnuts finely in a mortar or food processor. Mix with minced garlic, ground coriander, cinnamon, and salt. Gradually add cold water or chicken broth to form a smooth, thick sauce.Add acidity
Stir in vinegar or lemon juice to balance the richness of the walnuts.Combine chicken and sauce
Place the chicken pieces in a serving dish and pour the walnut sauce over them, covering completely. Chill in the refrigerator for several hours or overnight — Satsivi is traditionally served cold.Serve
Garnish with fresh parsley. Best enjoyed with Georgian bread or as part of a festive table.
