The name Nigvziani Badrijani literally means “eggplants with walnuts,” highlighting the dish’s key ingredients and its signature flavor. Traditionally, this dish was prepared during harvest season when eggplants were plentiful and walnuts were freshly collected. Georgian cooks would slice, fry, and roll the eggplants, then fill them with a rich walnut paste blended with garlic, fresh herbs, vinegar, and spices. This combination created a balance of flavors: creamy, nutty, slightly tangy, and aromatic, making it a favorite at family gatherings, feasts, and celebrations.
